La Nouvelle cuisine Scandinave : un voyage de saveurs locales

Aujourd’hui, on part en direction de la Scandinavie, à la découverte du patrimoine culinaire des pays du grand froid ! De la Suède à la Finlande, en passant par le Danemark et la Norvège, les produits locaux et la philosophie du « slow food » sont à la base de la Nouvelle Cuisine Nordique, une nouvelle tendance délicieuse, saine et équilibrée,  qui s’est emparée de la Scandinavie.


Sans plus tarder, on vous fait voyager à travers deux spécialités de chaque pays Scandinave, regorgeant d’histoires et de qualités gustatives ! 

1ere destination : Un petit saut gourmand du côté de Copenhague !

Capitale de la Danemark, Copenhague est un havre urbain de paix, de culture et de convivialité qui abrite des richesses culinaires qui valent la peine d’être goûtées.

1ere assiette : on vous a débusqué le plat préféré des Danois : le Stegt Flæsk, composé de porc croustillant accompagné d’une sauce au persil. Ce plat fait partie de la gastronomie danoise depuis des siècles ! Et pour qu’elle soit encore plus saliveuse, les danois utilisent également des lamelles de lard accompagnées de pommes de terre.

2nde assiette : à l’heure du lunch, c’est le fameux « Smørrebrød » qui nous donne appétit, célèbre sandwich ouvert avec du pain noir de seigle beurré sur lequel on dispose du pålæg (la garniture) tels des harengs marinés dans différentes sauces et avec de la crème, anguille fumée, oignons rouges, frikadeller, œufs, charcuterie, tout ce que vous pouvez imaginer!

Mais attention! Chaque pålæg est enrichie ensuite d’une garniture spéciale : œufs brouillés, chou, radis, salade, etc. Un délice !

2eme destination : Helsinki, on ramène nos papilles ! 

Capitale de la Finlande, Helsinki est une ville balnéaire animée de belles îles le long du littoral et de grands espaces verts, de forêts et de lacs splendides… Mais pas que ! La cuisine fait partie intégrante de la culture finlandaise, plutôt bien nourrissante et copieuse pour réchauffer les estomacs !

1ère assiette : Impossible de quitter la Finlande sans avoir goûté au renne, à moins d’être végétarienne ! Voici un plat qui vous réchauffera, le Poronkäristys, spécialité finlandaise à base de viande de renne préparée sous forme d’émincées tendres accompagnées de ses pommes de terre crémeuses, de tranches de cornichons et de confiture d’airelles.

2nde assiette : Envie d’une petite douceur ? On vous fait découvrir les Karjalanpiirakka, ces galettes en forme de pirogue appartiennent à la tradition culinaire de toujours de la Carélie, la province historique orientale de la Finlande. Elles tiennent tout juste dans la main, et surtout elles fondent carrément en bouche. Traditionnellement, on utilise pour leur cuisson de la farine de seigle pour la croûte, le centre de la galette étant fourré de pommes de terre, de riz ou de carottes. Cette spécialité est particulièrement délicieuse servie avec des œufs hachés tièdes et du beurre fondu !

3eme destination : un petit tour culinaire vers Oslo !

Capitale de la Norvège, Oslo est une petite ville moderne et dynamique qui repose au milieu des plus longs littoraux du monde, célèbres pour leurs profonds fjords aux eaux froides et cristallines. Il n’est donc pas surprenant que la pêche et les plats de poissons aient toujours occupé une place de choix dans la culture culinaire norvégienne.

1ère assiette : Équilibrée, saine et majoritairement à base de produits locaux, la gastronomie de Norvège mérite de se faire connaître au-delà de son populaire saumon et de son fameux aquavit. En voici la preuve ! Le Fårikål, plat préféré des Norvégiens, avec ses morceaux tendres de mouton accompagnés de choux et de pommes vapeur. Un régal !

2nde assiette : considéré comme une délicatesse dans le nord de la Norvège, le boknafisk est un poisson à demi séché au goût corsé, servi avec des pommes de terre en robe des champs, le tout arrosé de lard fondu… A tester sans plus attendre.

4eme destination : Sweet home, Stockolm !

Capitale de la Suède, Stockholm est l’une des capitales mondiales de la cuisine nordique, simple et épurée, mais néanmoins raffinée et créative !

 

1ère assiette : les fans d’Ikea trouveront leur bonheur en Suède. Pas seulement à cause des meubles, mais aussi pour leurs fameuses boulettes de viande, les Köttbullar, malaxées avec des épices, de la panure, du lait et des œufs. Elles sont servies avec de la purée, de la sauce à la crème et des airelles. Hmmmm, attention c’est chaud !

2nde assiette : Le hareng dans tous ses états ! Un plat bien typique de Suède, le stekt strömming, hareng frit ou pané accompagné de purée, de persil, de confiture d’airelles et d’une salade de concombres aux oignons frais.
